It is the season for pumpkins and so in keeping with that theme here is my experience making a batch of really easy Pumpkin Spice Macarons…and then sharing the tutorial! Well, when I say easy…what I mean is ‘easy’ as far as macarons go. If you have ever made macarons before then you know exactly what I’m talking about. Macarons are notorious for be a tricky but they a ‘well worth the wait’ type of pastry. These macarons are the Pumpkin Spice version of French Macarons see my post here, not American Macaroon cookies. I made these cuties in one afternoon because I already had the ingredients on hand at home. Be sure to take a look at the ingredient list before starting this quick and easy macaron recipe.


Ingredients:
Almond Flour
Egg Whites
Powdered Confectioners Sugar
Pumpkin Spice
Orange Sprinkles
Frosting or other filling {recipe from scratch below}
Supplies:
Cookie Sheets
Parchment Paper
-NOT Wax Paper or Foil
Bowl
Mixer
Mesh Sieve
Prep: 1-2hrs
Bake Time: 10 min (depending on oven)
Oven Temperature: 325 degrees F
Ingredients:
2/3 cups almond meal or ground almonds
1 1/2 cups powdered sugar
3 large egg whites
5 tablespoons granulated sugar
1 teaspoon vanilla extract
1 teaspoon Pumpkin Spice
Parchment Paper
You don’t have to fight the crowds in the grocery store or at Target. Many of these items you can get online and at Amazon.com!

STEP 1. Trace 1 inch circles on the back side of parchment paper that you will be using as your baking sheet liner. Trace them about 1.5 inches apart in rows as wide as your sheet, yet still have room for macarons to grow while baking.
STEP 2. SIFT {very important} the almond meal and powdered sugar mixture twice through a mesh sieve.
STEP 3. Beat egg whites on high, gradually add granulated sugar tablespoon by tablespoon.
Form stiff peaks.
STEP 4. FOLD {very important} in almond mixture, add half then add the rest. Fold, do not over mix keep it fluffy. DO NOT OVER MIX {very important}
– add in 1 teaspoon of Pumpkin Spice
STEP 5. Pipe 1.5 inch rounds on parchment paper. Let sit out on counter for at least 30 min….up to 45min before baking.
STEP 6. Pre-heat oven 325*F degrees. Bake for 10-12 min depending on oven.
Fillings:
Nutella
Jam
Vanilla filling
Vanilla filling:
7 Tablespoons butter
2 egg whites
3 1/2 Tablespoon Milk
1/4 cup sugar
Teaspoon Vanilla
STEP 1. Wisk together egg, milk, sugar over medium heat, until thick like pudding.
STEP 2. Then add butter little by little. Med heat bring to boil then remove and set aside until cool.
STEP 3. Finally add vanilla.
STEP 4. Pipe in between cookie shells.
