The great stuff about Chia Seeds are that they are considered a ‘superfood’ since they are a fantastic source for antioxidants and omega oils! That’s right omega!!! And it’s great for vegan and vegetarians because 1 Tbsp of Chia Seeds has 3g of protein….naturally! With that being said, I wanted to share my favorite Chia Seed Pudding Whole 30 Recipe with everyone so they are able reap the benefits of this tiny seed that valued by ancient Mesoamerican Aztec Warriors and modern day Athletes.
The recipe has *organic, and ingredient list will have *organic noted next to it but if you cannot easily source organic then make sure it only has natural ingredients in it, not artificial chemicals /preservatives. Organic is best practices in Whole30 diets.

Whole30 Chia Seed Pudding Tutorial
Step 1: Pour about 1 Tablespoon of Chia Seeds into a dessert cup/container.
Step 2: Next add your liquid of choice, like organic Coconut Milk or Almond Milk to the top of glass or about 4 inch per Tablespoon of Chia Seeds.
Step 3: Use the spoon to mix and combine for about 2 minutes, chia seed will start suspending in the mixture.
Step 4: Then add in 1/4 teaspoon Vanilla Extract. OR 1/4 teaspoon Vanilla Bean Powder (Whole30 option)
Step 5: Refrigerate for about 2-4hrs. I usually make it overnight, or in the early AM if I want one after dinner.
Optional: NOT approved by Whole30- Stir in 1 teaspoon of organic Honey, Agave, Stevia
Step 6: Top with fruit and serve!

Vanilla extract isn’t whole30 😉 It has alcohol in it.
organic Vanilla Extract, if you can find it
Not sure what “organic” in regards to vanilla extract means, but a lot of the alcohol free brands I found online contain sugar (therefore not whole30). Which brand did you use?
